Chocolate Cake Experiment: Version 1

I promised Zoe that we'd make dessert together tonight so we ended up making chocolate cake out of what we had in the house. The results are just okay. The texture is decent. The rise is nice. The flavor is not bad, but it needs some improvements. It's lacking some chocolate flavor and something else. I think I'm going to try a variation of this at some point to see if I can improve it. One thing I'm guess will help is the addition of butter which I am almost out of tonight. I am really only posting the recipe for my reference so I can alter it later.

8oz cream cheese
1/2 cup milk (I used goat's milk because it's all I had.)
1 tablespoon apple cider or white vinegar

1 cup natural cocoa powder
1 cup sugar (I used turbinado sugar.)
1 cup almond meal
1/2 cup potato starch
1 tsp salt
1.5 tsps baking soda
2 tablespoons cinnamon

3 eggs

Preheat oven to 350 degrees. Grease 8x 8 or 9x9 pan.

In a large saucepan, melt cream cheese with the milk. After it's all melted together, add in the tablespoon of vinegar.

In a separate bowl, whisk together dry ingredients. Add slowly into the wet ingredient.

Beat the 3 eggs in a large mixing bowl. Then add the rest of the ingredients into the eggs. After everything is well incorporated, pour mixture into square pan. Bake for 20-30 minutes.

  1. I like this recipe because it uses potato starch instead of corn. I bet the addition of butter will definitely make a difference. I wonder how it would be if you added some gluten-free chocolate chips to it, too?

    I've never made anything with almond flour -- I've been wantint to try it. Once I'm allowed sugar again, I'm going to give it a try.
