Pumpkin Muffin Update

Observations: The Pumpkin Muffins took FOREVER to bake-over 30 minutes for mini muffins! However, they had really nice flavor. I think a little more almond flour may have helped hold them together better. Also, they stuck to the muffin liner paper really badly. I didn't spray the liners so that may have been the problem.

Conclusion: I will be trying these muffins again but will be making adjustments to see if I can improve them.
