Chocolate Cake Experiment: Birthday Version!

This morning we had Thomas's birthday party. It was a family party. We ate brunch -blueberry muffins, scrambled eggs, roasted potatoes, and bacon- and, of course, finished off with cake!

I spent yesterday working on the cake. I baked it in the morning, crumb coated it in the afternoon, and frosted and decorated at around midnight. The decorations are loosely based on the They Might Be Giants' Seven video. That is why my little boy who is turning 3 has a 7 candle on his cake. (They were out of 3s anyway.)

1 cup natural cocoa powder
1 cup sugar (I used turbinado sugar.)
1 cup brown rice flour
1/2 cup almond meal
1 tsp salt
1.5 tsps baking soda
2 tablespoons cinnamon
1 tsp xanthan gum
1/2 oz finely grated dark chocolate
8oz cream cheese (softened)
1/2 cup (1 stick)  butter (softened)
1/2 cup milk + 2 tbsps vinegar OR 1/2cup + 2tbsps buttermilk
3 eggs


Chocolate Cake Experiment #2 was quite good, especially once we let it sit for a day. The almond flour that was too gritty fresh from the oven softened after sitting overnight and the consistency was great.


Because of the success of #2 I didn't want to make many changes to #3. I did, however, want a less crumbly cake since I planned to make two layers (a double batch of batter needed) to stack so I added xanthan gum. With that addition, I also needed to add some moisture so I added another 4 tablespoons of butter which means there's now a full stick in the recipe. Plus I added some grated dark chocolate, just because.


The results were spectacular! Dense, moist, boldly chocolate cake with a punch of cinnamon. Mmmmm....
