Gluten Free Chocolate-chocolate chip muffins






  • Chocolate - chocolate chip muffins

  • Chocolate-Chocolate Chip Muffins
  • 1 can of sweetened condensed milk
  • 1/2 cup of cocoa powder
  • 1/3 cup butter
  • dash of salt

  • 1/2 cup brown rice flour
  • 1/2 cup white rice flour
  • 1/2 cup potato starch
  • teaspoon baking soda
  • teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/4 cup brown sugar

  • egg , lightly beaten

  • Chocolate chips- gluten free, of course


  • Preheat oven to 375. Grease muffin pan.

  • In saucepan, dump the can of sweetened condensed milk, the cocoa powder, the butter, and the dash of salt and heat on low until everything has melded together. If you want, you can also add in some cinnamon and ground ginger. 



    Whisk together the dry ingredients. Then stir in the concoction from the sauce pan until just blended. Fold in the egg and finally fold in the chocolate chips. (I used about half a bag. Feel free to use more, if your heart desires.)


    Spoon into a muffin tin. I got about 24 mini muffins + a bit of batter that I dumped in a bread pan. Bake for 12-14 minutes for mini muffins or until done.


    ***I may twek the recipe a bit in the near future, but I want to be able to remember how I originally made them. Definitely plan to add vanilla next time.I meant to this time and forgot.
